Mexican Brownies

I had originally planned on taking Mexican brownies to our moms Cinco de Mayo play date at the park, but I had ended up cancelling because I needed to drive my final cake to my husband's work.  We ended up going to the park and playing with Daddy for a little while that day.

Since I had all the ingredients on hand, I decided to put them together last night.  We also made homemade vanilla ice cream to top the brownies.  I had never made Mexican brownies before, and I was a little nervous...not about the cinnamon part but about the cayenne pepper part.  Well...let's just say, the brownies are amazing!  They have wonderful flavor!  My husband says he thinks he enjoys them better than regular brownies because the spices add such a nice taste to them.  I followed Aaron Sanchez's recipe for Mexican Brownies...the only changes being I used the cayenne pepper since I could not find the Mexican pepper.  Also I had intended to add some bittersweet chocolate chips to the batter, but I had forgotten, so after I threw the brownies in the oven, I quickly sprinkled some chocolate chips over the top (I know, I know...you are not supposed to open the oven once you put something in to bake, but I had just put them in, so I figured they would be okay).  Next time I will mix the chocolate chips into the batter.  The brownies are tasty the way they are, but if the chocolate chips were mixed into the batter, they wouldn't have changed to a lighter color.  For my first attempt at Mexican brownies, I was extremely pleased.  Believe me, there will be a next time...and a time after that...and a time after that...etc.
